- Fold your filter and place it in the Chemex so the filter has three layers on the side with the pouring spout. Pre-wet your filter with hot water to wash out the filter’s paper taste and warm the Chemex equipment. Discard water after use.
Step 3
- Place your brewer on the scale and tare to 0.
- Put your freshly ground coffee into the coffee filter. Shake the brewer gently to settle the grounds before making a small divot in the center of the coffee grounds using a utensil (like a chopstick) or your finger. This will ensure an even density throughout your coffee bed, despite the brewer’s conical shape.

- Confirm that your dose is correct then tare the scale to 0 again. Start your timer.
- Starting at the center of the grounds, vigorously add 100g of water in an outward spiral. Allow the coffee to bloom, or off-gas, for 30 seconds.
Step 5
- After the 30 seconds, add another 100g of water, and allow to degas for an additional 30 seconds.
- A minute into your brew time, pour the water in steady spirals until you reach 340g.
Step 5
- Now, maintain this water level, gently adding 100g of water at approximately 30-second intervals until you’ve hit your total yield, 640g.
- Allow the coffee to drip through before removing the filter and grounds. Discard the filter, swirl your Chemex, pour, and enjoy!
